To me these flours are not the same and showed different characteristics. Please try not to focus on the fact that these loaves over proofed a bit, I went to bed at 6am and couldn’t wake up earlier to bake them. But actually that helped me even more with my test, over fermentation, through it I was able to conclude more things. What I
